Ragada is Indian street food popular in Mumbai and Gujarat it is also very famous as Ragada patties which is basically Ragada served with aloo Tikki(potato cake).
Ragada is made up of cooked white vatana with tangy paste and spices.
This Ragada recipe is our family's favourite during the month of Ramadan while opening the fast. This recipe is very versatile and easy to make it also makes your stomach full feeling. The flavourful Aroma of fried onion and fresh green coriander leaves topped on this Ragada is breathtaking and tangy you flavour is delicious.

Ingredients
2 cups white vatana1 teaspoon turmeric powder
1 small onion (sliced)
2 teaspoon coriander-cumin powder
1 teaspoon Kashmiri red chilli powder
1 tablespoon Kokam paste
1/2 tamarind paste
Salt to taste
2 tablespoon oil
For garnish
2-3 tablespoon fresh green coriander leaves(chopped)
Method of preparation
- Firstly pressure cooks the soaked white vatana with some turmeric and salt in a pressure cooker until the vatana's are cooked and soft.
- After vatana's are cooked. Heat oil in a kadhai onion and fry them until golden brown. remove and keep aside.
- Now in the same remaining oil add coriander-cumin powder, Kashmiri red chilli powder, kokum paste, tamarind paste and salt. Mix all of them very well.
- Then add the cooked vatana's and mix them until well combined. (Note: add water if needed)
- Now remove the Ragada in a serving platter and garnished with fried onions and freshly chopped green coriander leaves
